I have made this chilli jam for years, for myself and for friends, finessing it over time. Every fresh ingredient is sourced from local farmers where possible, markets where its not. Every batch is made by hand and boiled and stirred for hours until it reaches the perfect consistency, then poured boiling hot into sterilised jars. Apparently it's perfected now.
